little pleasures in busy times

You guys.

I am so ready for a break. So close...just a few more days. This holiday season is calling my name, and I am just a couple of papers away from a long winter's nap.

But don't worry. I'm still enjoying the everyday stuff too. Please tell me you are too. These are the things that have been getting me through busy days...

Homemade vegan hot cocoa topped with rice-based whipped cream. (This whipped cream is seriously pretty amazing.)

Snacking on healthier versions of comfort food.

To make baked parsnip fries:

Preheat oven to 450 degrees.
Slice parsnips into fries.
Shake up in a bag with olive oil, salt, pepper, and parsley flakes.
Bake until tender.
Serve with tomato sauce.

  1. So...we'll be having some parsnip fries this week for sure. And I want to try that whipped cream! Where did you find it? We made hot cocoa this week too, but used whipped coconut cream instead. :) Hang in there work-wise - you're almost done!

    1. Whole Foods. I love the homemade coconut cream, but the rice whip is so easy and it's just always on hand. But I think Trader Joe's makes canned coconut cream...will have to try that next!

  5. Lovely post again : ) I have indulged with coffee the past week to accompany my lebkucken, and put western cedar up on the doorways between rooms to hold up the straw ornaments, I'll put pictures on facebook. Xoxox to you all, plant a kiss right on Maus's little lips for me!

  7. How CUTE is your cat?!? If my apartment wasn't 100000000 degrees year round, that would definitely be how I would spend my winter afternoons.

    And I don't even like parsnips but somehow you made them look deeeelish.

    1. You should try them this way! Some of them definitely still have that parsnip-y flavor, I guess, but I think they mostly just taste like fries.
