baby birthday cakes

Last weekend my parents celebrated their anniversary and my dad's birthday. And my mom's birthday was only about a month ago! So I wanted to whip up something special for their visit.

And special these were...

We snacked on these icy desserts all weekend. It's a bit like eating a date cookie, cheesecake, and raspberry sorbet all at once. I used this recipe from Sarah Britton, an amazingly talented chef and food photographer. It's surprisingly easy, totally raw, and the only animal product it calls for is raw honey. Definitely recommended.

I'm not the only one. I've seen at least two other bloggers inspired by this same post! Great minds eat alike. ;-)

  2. These are the BOMB!!! I am definitely going to make them. Such deliciousness deserves to be experienced by everyone. Oh, and I'm going to invest in one of those cute little tart pans, the smartest way for easy access to final product. Love you, Clair, and thanks for introducing me to this lovely dessert. : ). -Mom

  4. Oh Clair, I LOVE these little mini versions you came up with! How great! This is hands down my most favorite dessert of the moment. I'm embarrassed to say how much I've been eating it this summer. I made a blueberry version just recently too. I think the mini ones would be great for a dinner party.
